Chewy Chocolate Peppermint Cereal Bars

Get peppermint or candy canes in your stocking...or craving something minty? Combine them in a creative twist on a traditional chocolate cereal bar. Blend marshmallows, chocolate cereal, and chocolate chips with Butcher Boy Vegetable Oil, and vanilla, and this scrumptious treat will keep you in the holiday spirit for days to come.









INGREDIENTS

½ cup + 1 t BUTCHER BOY VEGETABLE OIL

20 oz mini marshmallows

9 cups chocolate cereal

½ t vanilla

¼ t peppermint extract

pinch of salt

1 ½ cups dark or semi-sweet chocolate chips

½ cup crushed peppermint candy



DIRECTIONS

Prepare a 9x13 baking dish by lining it with parchment paper or lightly greasing it. Set aside.


In a large pot, combine ½ cup of oil and marshmallows and cook over medium heat until the marshmallows are melted.


Remove from heat and immediately stir in vanilla, peppermint extract, and salt. Add cereal and stir until evenly coated.


Transfer cereal and marshmallow mixture to prepared baking dish with a spatula. Press gently into dish until smooth and even. Set aside.


In the microwave or a double boiler, melt chocolate chips with remaining teaspoon of oil, stirring frequently. Pour melted chocolate over the cereal bars and use a spatula to quickly spread the chocolate as evenly as possible.


While the chocolate is still wet, sprinkle crushed peppermint candy over the top.


Allow bars to cool for two hours or until the chocolate is fully hardened. Cut bars into squares and serve immediately, or store in an airtight container (with parchment or wax paper between layers) for several days.
